One bowl cheese bread (recipe)

Was supposed to go to Athens today but it was raining non stop since midnight… So the trip was canceled after we got up at 8AM…. Plenty of time to spare and I decided to bake, of course 🙂

Made cheese bread and flourless brownie (the latter still cooling in the fridge)

Inspired by Give Recipe

Ingredients:
3 eggs, at room temperature
4 cups plain yogurt, at room temperature ( I substituted with 2.5 cups of almond milk)
1 and ¾ cup flour of choice (I used whole wheat)
1 tsp baking powder
1 and ½ cup mixture of your favorite cheese, crumbled or grated

Method:
1. Grease 30cmx17cm baking pan and put aside. Preheat oven to 350F.
2. Beat eggs well until creamy.
3. Add in the rest of the ingredients one by one, mixing each of them well.
4. Pour the batter into the baking pan and bake it for 18-20 minutes or until golden.
5. Cut it into squares and serve.

Made hakka abacus beads the past two nights (in a row, just because the first night’s sucked). So nways, this was the outcome from the second try =) Much better but not perfect.

So instead of yam, I decided to use sweet potato instead (in an attempt to try to make it healthier!). The white bits are actually quinoa. I thought the second try was a bit too salty because of the dried shrimps’ juices that I decided not to get rid of…. image

Friday is always the best day of the weekday (no brainer statement). The view from 4pm onwards today….I wished I had my workstation facing this! Hahaha..image

In order to satisfy mooncake craving, I made green tea red bean, but I used the wrong flour =( Should have used glutinous rice flour instead of wholemeal… At least the shape may trick my mind into thinking I am eating mooncake! image

Probably not……Haha!
