Hot and Sweet Tofu (recipe)

Just got back from a weeks trip to Chicago and Cleveland last night. Had a pretty long and tiring day today with the inspection. Really hope all will go well and that His favour and blessings will continue to stay with us all through til the end of this process!

So after a short run today, decided to make japchae again tonight and added tofu dish for dinner.

Here’s how it turned out! 🙂 Had a bit too much and super full now!

Inspired by Honest Cooking

Ingredients:
1 block of firm tofu
¼ cup of cornflour / corn starch
A pinch of salt
2 tbsp of white sesame seeds (I omitted)
½ cup of oil, more or less, for shallow frying
A small bunch of spring onions or chives

For the sauce:
3 tbsp of honey / agave nectar
1 tsp of soya sauce
2 tbsp of white wine vinegar
2 tsp of red chilli flakes
1 tsp of freshly grated ginger
1 tsp of freshly grated garlic
2 tsp of sesame oil

Method:
1. Mix all the ingredients for the sauce in a pan. Simmer on low heat until it starts to bubble up a bit. Continue to simmer for 2-3 mins and then turn off flame.

2. Now, to fry up the tofu, if your tofu came packed in water, drain completely and press between kitchen towels to extract extra moisture. Cut into bite-sized cubes and dredge in the corn flour until fully coated.

3. Heat oil for shallow frying in a pan and add the tofu pieces in small batches making sure they don’t overlap at all. Fry until light golden brown, drain and continue until you are done with the entire lot. Drain on kitchen towels to absorb the extra oil.

4. Add the fried tofu to a wide bowl and pour the sauce on top.

5. Top off with the sesame seeds and chopped spring onions  / chives. Toss well to coat.

Made hakka abacus beads the past two nights (in a row, just because the first night’s sucked). So nways, this was the outcome from the second try =) Much better but not perfect.

So instead of yam, I decided to use sweet potato instead (in an attempt to try to make it healthier!). The white bits are actually quinoa. I thought the second try was a bit too salty because of the dried shrimps’ juices that I decided not to get rid of…. image

Friday is always the best day of the weekday (no brainer statement). The view from 4pm onwards today….I wished I had my workstation facing this! Hahaha..image

In order to satisfy mooncake craving, I made green tea red bean, but I used the wrong flour =( Should have used glutinous rice flour instead of wholemeal… At least the shape may trick my mind into thinking I am eating mooncake! image

Probably not……Haha!

Typical weekend…not…

The week started with some time spent at the shelter.. To my surprise, my baby Poppy was still there… which was really – mixed feelings for me, happy to see her yet sad that she was still around still… She really is a lovely girl.. Initially the hubby  could not get her out for a walk, probably coz she was afraid as there were too much barking all over the place…But I am pleased to report that I successfully brought her out for 2 wonderful walks =) Oh I love that feeling, watching her get out of her crate and running freely… Amazing to watch…Pure joy..

We successfully cooked another ‘healthy’ meal as well…curry chicken with sweet potato instead of normal potatoes… hahaha.. But I am not sure if the meal is even healthy to begin with.. so, yeah…

Early start to church today… was there by 7.15am but still got scolded by the hubby for being too slow.. rightttt…

Had bbq at colleague’s place for lunch and bbq yet again for dinner…How am I going to run in a half next week… I can only hope for the best…
